Add a food processing and preserving station

Harvests arrive in gluts. A processing station lets you wash, cut, can, dehydrate and ferment large batches without taking over the whole kitchen.

How

  1. Plan a long, washable worktop, a deep sink and wall storage for canners, jars and a dehydrator. The methods are in living-10, living-11 and living-12.
  2. In hot climates, consider a shaded outdoor or semi-outdoor processing area so canning heat stays out of the house.
  3. Plan where cooled jars will sit undisturbed, then where they go on the pantry shelves. Label every jar with contents and date, as living-9 advises.
  4. Place the dehydrator and any electric canner where they can run in the middle of a sunny day (living-6).

Safety: Follow tested canning methods only (living-10).
